Wagashi (和菓子) Master's Workshop

For the first time in the United States, master Junichi Mitsubori will be teaching a hands-on wagashi workshop where attendees will learn how to make artisanal Japanese wagashi. In this 8-hour Master's workshop you will learn to create the 5 wagashi designs depicted below and an exclusive New York bonus design! From the making of the nerikiri (bean paste with mo-chi) to the various techniques used to mold, sculpt and color these edible masterpieces, you will be fully immersed in this beautiful and delectable art form. Master Mitsubori’s talent has been showcased at prestigious venues around the world, including the Sydney Opera House and the Salon du Chocolat in Paris. It is truly a sight to behold. All materials will be provide. Space is limited.
The workshop will break for lunch from 1pm to 2pm. Please make your own accommodations. Asia Society's Garden Court Café is always an option.

Master Junichi Mitsubori will also be giving a live performance and tasting reception on Monday, June 10, 2019 at 6:30pm.
Junichi Mitsubori is a third-generation wagashi artisan hailing from Yokosuka City, Kanagawa. Mitsubori founded his own school of wagashi, called Kadō (菓道)which uses bespoke utensils, calculated gestures, and music to produce a highly stylized wagashi experience. His purpose is to spread the culture of the wagashi to all four corners of the globe, and help the children of his country see becoming a wagashi chef as a viable career path.
