Our Week With Jeong Kwan

Whoever has been to Seoul before knows how hectic South Korea can be. Our week with Jeong Kwan, Korean Buddhist nun and cook, showed us a different side of her home country.

We have accompanied her on a visit to the mountainous village of Lohn, GR, where she met the young top chef Rebecca Clopath. Read our look back here: "I Form a Loaf, Wrap It in Rice Straws and Let It Hang in a Room to Ferment, Like You Would Do With a Ham."


We have spent considerable time with her at the organic vegetable section of a local grocery and had the chance to watch her cook for our event in mid-January. Find our recap and the menu for the night here: "The Most Valuable Ingredient Is Time"


And we have received a recipe for one of our and guest's favourite dishes: the spicy dried persimmon and cucumber salad.
