Crisp Banana Rolls
The saba or cooking plantain is boiled whole, sliced, then fried on its own, or cut into strips and encased with jackfruit and sugar in a lumpia wrapper, and then fried. Additional sugar is caramelized on the wrapper. It is both street food and fine-dining dessert, especially when served with ice cream.
Ingredients:
4 ripe plantain bananas or saba
1/2 cup or 120g fresh or boiled jackfruit or langka (optional)
'6 20x20 cm or 8x8 in square spring roll or lumpia wrapper
2 cups or 480 ml oil for deep-frying
1 cup or 200g white sugar
Preparation:
1. Peel the bananas. Slice each piece in half lengthwise, then each half into three strips lengthwise.
2. Slice jackfruit into strips.
3. Cut each spring roll wrapper into 4 small square pieces.
4. On each square of wrapper, put one banana strip on one edge, then 1 or 2 strips of jackfruit beside it. Roll towards the opposite side. Seal the end with a little paste made of flour and water.
5. Repeat with remaining bananas.
Cooking:
Just before serving
1. Heat a wide skillet and pour in oil. Make sure that oil is not too deep. 2. Fry rolls over medium heat around 3-5 minutes.
3. When pale golden in color, sprinkle with sugar and continue to toss to allow sugar to caramelize.
4. Remove turron to a tray rack to drain excess oil.
