Join us for a special demonstration by Master Junichi Mitsubori of wagashi, the making of artisanal Japanese desserts. Akin to the precision and refinement of the Japanese tea ceremony (茶道), Kadō (菓道)— the Way of Wagashi — transforms traditional sweet-making into a form of consumable art. Master Mitsubori crafts the nerikiri (bean paste with mochi ) with his hands, scissors and needles into intricate creations like those in the image above. Master Mitsubori’s talent has been showcased at prestigious venues around the world, including the Sydney Opera House and the Salon du Chocolat in Paris. It is truly a sight to behold. The demonstration will be followed by Q&A, moderated by Asia Society’s Global Initiatives Assistant Director, Yoshie Ito; and a reception to sample Master Mitsubori’s confectionery masterpieces.

Junichi Mitsubori is a third-generation wagashi artisan hailing from Yokosuka City, Kanagawa. Mitsubori founded his own school of wagashi, called Kadō which uses bespoke utensils, calculated gestures, and music to produce a highly stylized wagashi experience. His firm purpose is to spread the culture of the wagashi to all four corners of the globe, and help the children of his country see becoming a wagashi chef as a viable career path.
Yoshie Ito (moderator) is the Assistant Director of Global Initiatives at the Asia Society. Prior to joining the Asia Society, Ms. Ito held positions around the world as investment analyst and investor relations director. She was educated in Japan, Mexico, the U.K. and the U.S.A., receiving a classical Japanese education from the Japanese Lyceum in Mexico City. She holds a master’s degree in Finance and Investment from the University of Exeter, and a second master’s degree in East Asian Studies from Yale University.
