On May 8th, Asia Society Patrons made their way to Korin, a hidden gem of New York. To a captivated audience, Founder and President of Korin, Saori Kawano spoke on the sword-making techniques used to craft a Japanese kitchen knife and the equally storied art of blade sharpening. Master Chiharu Sugai and his apprentice then demonstrated the proper angles to place blades to match the large rotating grind stone, pressure and angles on smaller stones and elaborated on the importance of selecting the proper natural stones that fit your blade.
