Herbed Mashed Potatoes

Creamy mashed potatoes with a twist.

Serves 4.

Ingredients

500 g/1 lb potatoes
2 tablespoons melted ghee or butter
3 tablespoons boiling milk
3 tablespoons lime or lemon juice
1/2 teaspoon salt or to taste
6 tablespoons finely chopped fresh mint leaves
3 tablespoons finely chopped spring onions (scallions)
mint sprigs for garnish

Directions

Boil potatoes until tender, drain in a colander, peel and mash while still hot. Add melted ghee and boiling milk and mix to a creamy, fluffy consistency. Add remaining ingredients and mix well. Pile into a bowl or pat into a flat cake and garnish with mint sprigs.
