Stir-Fried Prawns and Celery

Meaty prawns in oyster sauce get are enhanced with a crescent-shaped celery garnish.

Serves 4-5.

Ingredients

500 g/1 lb raw prawns
1/2 teaspoon crushed garlic
1/2 teaspoon salt
2 stalks celery
1 tablespoon peanut oil
1 teaspoon finely chopped ginger
1 tablespoon oyster sauce or soy sauce
1 teaspoon cornflour (cornstarch)

Directions

Shell and devein the prawns and rub the garlic and salt over them. Slice celery into thick slices shaped like crescents. Heat peanut oil in a wok and fry the ginger, stirring, until fragrant. Add celery and stir-fry on moderately high heat for 1 minute. Add prawns and continue to stir-fry for a further 2 minutes. Add oyster sauce and then the cornflour mixed smoothly with 2 tablespoons of water. Stir until clear and thickened, and serve with steamed rice.
