Carrot Relish
Ingredients
500 g/1 lb carrots
3 tablespoons oil or mixture of oil and ghee
2 teaspoons crushed garlic
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon chilli powder
1/2 teaspoon salt or to taste
1 teaspoon jaggery
finely chopped mint or coriander
Ingredients
Wash and peel the carrots, then slice in thin rounds. Heat the oil and gently fry garlic until soft and fragrant. Add cumin, turmeric, chilli powder and salt, mix and add the carrots, tossing to coat with the spice. Add 2 tablespoons water and the jaggery, cover and steam for 10 minutes or until carrots are tender but still slightly crisp. Sprinkle with fresh herbs before serving.
