Cambodian Grilled Chicken (Mouan Ang)

A specialty in the town of Kep by the Gulf of Siam, this chicken dish tastes best when grilled outside.

Serves 4.

Ingredients

1/4 cup mushroom soy sauce
2 tablespoons sugar
4 garlic cloves, smashed and coarsely chopped
1 tablespoon vegetable oil
1 teaspoon freshly ground pepper
1/2 teaspoon salt
8 chicken legs

Directions

In a large bowl, combine soy sauce, sugar, garlic, oil, pepper and salt. Apply this moist rub to the chicken legs with your fingers until the legs are well coated, then set aside for 30 minutes.

Preheat the grill or broiler, positioning a rack about 6 inches from the heat. Grill or broil the chicken from 25 to 30 minutes, turning occasionally, until golden brown and cooked through. Serve hot.
