Asia on a Plate Series
For the latest edition of our ‘Asia on a Plate’ series we bring you POH (Progressive Oriental House), which is opening its doors to the public in the first week of July. Members of Asia Society have the first opportunity to enjoy this fine-dining experience at a substantially discounted rate for a curated 12-course dinner with drinks.
POH is an outcome of an extensive research of flavours from the diverse cuisines of South-East Asia - from the streets to the Temples and Palaces. The result is a confluence of relative taste and textures that reflect the versatility of produce and cultures, which is meticulously blended with modern and unconventional cooking techniques. POH works towards creating a seamless union of progressive Asian flavours and textures, retaining the essence of the respective regions by evoking nostalgia through the POH Experience.
The POH Experience
The POH Experience encompasses a combination of the Yàodiàn Bar experience, the Sushi Bar experience and the Degustation Dining. The Yàodiàn Bar translates to and propagates vintage herb pharmacy tradition of China, offering a handcrafted sensory mixology experience unlike any witnessed globally. The experience, presented through POHs signature cocktails, enables the diner to expose and use their senses through the incorporation of various Asian herbs and spices during the stage of preparation.
The idea behind the Sushi Bar is that of a ‘purist’. Here, the traditional experience of having Sushi in an Izakaya is recreated, where it offers the “Omakase”, which literally translates into the chef’s choice of his best products. With the Sushi Bar experience, the diner has the opportunity to personally interact with the Itamae or the Sushi Chef to create an experience based on their palate and preferences. The Itamae creates a seamlessly designed course ranging from subtle to more profound flavours of the dishes, leaving an indelible stain on the mellowed imagination of guests, allowing them to enjoy a truly sensory Sushi Bar experience, a unique attribute of POH.
The final leg of the POH Experience, is carefully crafted to bring in a sense of familiarity and surprise in the same bite, while tinkering the taste buds and making the experience fun and unique. Extensive focus has been laid in handpicking seasonal selection of indigenous ingredients, coupled with a strong supply chain to ensure sustainability and consistency in flavours.
