Boxthorn Soup

Ingredients

2 tablespoons oil
250 g/8 oz tender pork, sliced thinly
3 cups boxthorn leaves, washed and dried
6 slices fresh ginger
1 tablespoon finely grated ginger
1.5 litres/3 pints/6 cups chicken or pork stock
2 teaspoons sugar
salt and pepper to taste
few drops sesame oil

Adzuki Bean Soup

Serves 4.

Ingredients

250 g/8 oz/1 cup adzuki beans
2 tablespoons oil
2 medium onions, finely chopped
1 teaspoon finely chopped garlic
1 carrot, finely diced
1 stick celery, diced
1 tablespoon Japanese soy sauce
1 tablespoon miso

Directions

Wash the beans and soak overnight. Drain, rinse and put into a pan with 1.5 litres/3 pints/6 cups fresh water and bring to the boil. Cover and simmer for about 1 hour or until tender.

If you want to make a can of this expensive ingredient go further than one dish, use the liquid from the can and the trimmings of abalone for this soup.

This recipe should be started a day ahead, as the soup has to be chilled in order to remove all traces of fat. It would be a good idea to make more than is immediately needed and freeze the stock for future use.

The basic idli is two parts rice to one part urad dhal, both soaked separately, drained, then ground separately. The urad dhal must be very smooth, the rice should be slightly gritty, like coarse semolina. The fermentation process (which can take from 12 to 30 hours depending on weather conditions) is what makes the batter light and foamy.

125 g/4 oz urad dhal
1/2 teaspoon salt
1/4 teaspoon baking powder

250 g/8 oz fresh small prawns
250 g/8 oz roasted or boiled belly pork
250 g/8 oz bean sprouts
6 cloves garlic
3 shallots

3 tablespoons oil
2 stems Chinese celery (optional)
2 red chillies, sliced

100 g/3 1/2 oz carrot
1 tablespoon oriental sesame oil
1 cup brown rice

This rice dish also uses the absorption method. After washing and draining the rice and leaving it to dry, it is fried in ghee with spices. The liquid used is flavorful stock. Many elaborate dishes such as biriani or pilau are based on layering rice with spiced meat, poultry or seafood.
