Ingredients

2-3 tablespoons sesame seeds
400 ml/14 fl oz can coconut cream
185 g/6 oz/1 cup medium or fine semolina
250 g/8 oz/1 cup sugar
125 g/4 oz ghee or butter
pinch of salt
1/2 teaspoon ground cardamom
3 eggs, separated

Directions

Toast the sesame seeds in a dry pan over medium heat, stirring constantly, until they are golden. Turn out onto a plate to cool, or they will become too dark.

Directions

Choose a firm, unripe fruit and remove the skin with a sharp knife. Cut lengthways into 6-8 wedges, then cut each wedge crossways into very thin slices, no more than 2 mm (1/12 in) thick. Sprinkle lightly with ground turmeric and salt, rubbing evenly over the slices. Leave for 15 minutes, then dry on paper towels to absorb as much of the moisture as possible.

The potatoes for the filling retain a floury texture when cooked in the skins before peeling. You may prefer to use a cooked and mashed vegetable other than potato. The rotis are quite filling and make a good sandwich substitute for lunch served with a beetroot raita and one of the chutneys. Roti is a generic name for unleavened bread.

These quantities will make 8 rotis. Allow 1 hour or more resting time for the dough.
