Japanese Omelette (Tamagoyaki)

Ingredients

3 eggs
1/4 teaspoon salt
1/4 teaspoon sugar
2 tablespoons dashi or water
1 teaspoon mirin or sherry
1 teaspoon Japanese soy sauce
2 teaspoons oil
2 tablespoons cooked green peas
2 tablespoons finely diced cooked carrot
2 tablespoons grated white radish
few slices Japanese pickled ginger

Directions

Beat eggs lightly until well mixed but not frothy. Stir in salt, sugar, dashi, mirin and soy sauce.

Directions

Boil peeled cassava until tender but firm. Drain well, then break into lengthways finger strips. Since the cassava has natural divisions running the length of the tuber anyway, it is best to use these rather than try to cut them into precise pieces. Don't forget to find and lift out the core, which is totally inedible.

375 g/12 oz panir or 1 block ricotta cheese
2 tablespoons ghee
2 tablespoons oil
1 medium onion, finely chopped
500 g/1 lb ripe tomatoes, peeled and chopped
1 teaspoon ground turmeric
1 teaspoon chilli powder
3 whole cloves
3 cardamom pods, bruised
1 teaspoon sugar or to taste
1/4 teaspoon saffron strands

Serves 2 or 3.

Ingredients

4 eggs
1 tablespoon cold water
salt and black pepper to taste
1 tablespoon ghee or oil
3 tablespoons sliced fresh chillies, red or green
3 tablespoons sliced shallots
1 teaspoon chopped fresh dill


Directions

Beat eggs slightly, adding cold water, salt and pepper. Heat half the ghee in a small pan and on low heat cook the chillies and shallots until soft.

1 bunch of fresh sweet basil
oil for deep frying

Directions

If the leaves are from your own garden or are organically grown and you know they have not been sprayed, there is no need to wash them. If they have been washed, dry them as thoroughly as possible. Strip Leaves from stem.
