Being careful not to attribute this famous dessert to one country or the other. For the softer, higher Australian pavlova, pile the meringue thickly, about 6 cm (2 1/2 in) high. For the slightly flatter but crisper New Zealand version, spread it out a bit more thinly into a larger circle.

400 ml/14 fl oz can coconut milk
5 tablespoons white sugar
1/4 teaspoon salt
4 tablespoons cornflour (cornstarch) or arrowroot

Directions

If the brand of canned coconut milk is very thick and rich, dilute before it is measured with an equal amount of water, or only 1 cup water if it is not very thick.

Combine coconut milk, water, sugar and salt in a saucepan and stir over medium heat until sugar dissolves and simmering point is reached.

Guinataan with Jackfruit

A popular sweet throughout Asia, this is known as guinataan in the Philippines and bubor cha-cha in Malaysia. The ingredients change according to seasonal availability and the starch component varies from glutinous rice to tapioca to sago. Fresh coconut milk is best, but a good quality, smooth, canned coconut milk may be used.

1 litre/2 pints/4 cups milk
300 ml/10 fl oz cream
1 tablespoon ghee or unsalted butter
100 g/31/2 oz/1 cup flaked almonds
125 g/4 oz/1/2 cup sugar
pinch saffron strands
1/2 teaspoon ground cardamom
flaked almonds for garnish


Directions

In a heavy saucepan combine milk, cream and ghee and bring to the boil, stirring constantly. Turn heat very low, add almonds and sugar and stir till sugar dissolves.
