A surprisingly delicious dessert in spite of its extreme simplicity.

Serves 8.

Ingredients

500 g/1 lb fresh chestnuts
300ml/10 fl oz/1 1/4 cups cream
4 tablespoons caster sugar
glazed walnuts (optional)

Food & Recipes Balushahis, deep-fried pastry circles that are dipped in syrup and coated with crumbly nuts, go particularly well with after-dinner coffee. Almonds and pistachios are used here, but any other unsalted nuts may be substituted.

Ingredients

For the pastry:
250 g/8 oz plain flour
1/4 tsp bicarbonate of soda
a pinch of salt
1/4 tsp cardamom powder
4 tbsp melted ghee
3 tbsp yoghurt
1 1/2 tbsp cold water
Ghee for deep-frying
2 light-coloured cardamom pods, bruised

Ingredients

1 tablespoon unflavoured gelatine
500 ml/1 pint/2 cups water
250 g/8 oz/1 cup sugar
1 level tablespoon all-purpose flour
125 ml/4 fl oz/1/2 cup orange juice
3 tablespoons lemon juice
125 ml/4 fl oz/1/2 cup passionfruit pulp

Directions

Sprinkle gelatin over 1/2 cup cold water and leave for 5 minutes to soften. Put remaining water and sugar into a pan and bring to the boil.

1 litre/2 pints/4 cups full cream milk
400 ml/14 oz can full cream evaporated milk
400 ml/14 oz can sweetened condensed milk
300 ml/10 fl oz dairy cream
1 small can reduced cream (optional)
2 tablespoons sugar
5 bruised cardamom pods
1/4 cup pistachio kernels
1 tablespoon cornflour (cornstarch)
4 drops kewra essence
few drops green food colouring (optional)

Being careful not to attribute this famous dessert to one country or the other. For the softer, higher Australian pavlova, pile the meringue thickly, about 6 cm (2 1/2 in) high. For the slightly flatter but crisper New Zealand version, spread it out a bit more thinly into a larger circle.
