For many a child in China, Korea, Japan, and Vietnam, this parent's reprimand is one of the first lessons in social manners. For each of these ethnic groups, putting food in your mouth with your fingers is viewed as an ill-mannered, rather animal-like act.

Kare-Kare (Filipino Beef or Oxtail Stew)

Every good cook in the Philippines has his or her own version of this stew. One thing remains constant, and that is the fact that this is a big, heavy meal usually served for lunch on Sundays or holidays, so that it may be followed by a siesta.

A popular sweet throughout Asia, this is known as guinataan in the Philippines and bubor cha-cha in Malaysia. The ingredients change according to seasonal availability and the starch component varies from glutinous rice to tapioca to sago. Fresh coconut milk is best, but a good quality, smooth, canned coconut milk may be used.

Ingredients

120 ml/4 fl oz/1/2 cup warm water
7 g/1/4 oz sachet active dry yeast
185 g/6 oz/3/4 cup caster sugar
250 g/8 oz butter
3 eggs
570 g/1 1/8 lb/4 1/2 cups plain (all-purpose) flour
125 ml/4 fl oz/1/2 cup milk
125 g/4 oz sharp cheddar cheese, finely grated

In the Philippines the water from washing rice is used as the cooking liquid. It is the second washing water which is used, the first rinse carrying away dust and impurities.

Serves 4.

Ingredients

1 litre/2 pints rice water
4 whole pods green tamarind, fresh or bottled
4 small fish steaks
or 500 g/1 lb fillets cut in pieces
2 tablespoons fish sauce
1 cup sliced water-lily stems
1/2 cup sliced spring onions (scallions)
with green leaves salt and lime juice to taste
